Bayn's recent activities on the sales front show that there is an interest from producers for education and more experience when it comes to sugar reduction with alternative and healthy sweetening sources.

During the spring, Bayn has conducted several chocolate courses for chocolate manufacturers. Bayn's R&D department has lectured about chocolate on a deeper, molecular level and how our senses are influenced by our ideas about how we perceive taste, especially sweetness. It also highlighted how this knowledge can prove useful at all stages of the production chain.

In addition to the theory, customers have completed practical sessions where they had to temper Bayn's chocolate without added sugar, make pralines, toffee, almond paste and ice cream. On all occasions, the customers have been surprised by the delicious end products.

As a final step, sensory tests were carried out. For example, the taste tests consisted of Bayn-sweetened chocolate and custard versus sugar-sweetened chocolate and custard. To our delight, the results of these tests showed that more people preferred products sweetened with Bayn solutions than those with regular sugar. 

We are happy that this concept seems to be such a success and we hope that more producers will come to us and broaden their horizons when it comes to product development with healthy alternatives to sugar.
